pekko-grpc 1.2.0 released

• built with io.grpc 1.75.0
• I would also recommend pekko 1.2.1 and pekko-http 1.2.0
• hopefully, pekko-http 1.3.0 will be released in the next week or 2

I will be updating everything to latest in follow up commits. I was only comfortable with going to 1.1 initially. And saw the grpc release today.
